Fluffy American-Style Pancakes Recipe

It's pancake day, and it's saving me from my post-birthday blues. Going back to work yesterday after being completely spoilt for my birthday was so hard. So to keep the celebratory spirit alive I thought I'd share my recipe for fluffy American-style pancakes. As I've just been diagnosed as lactose intolerant, to keep my nut allergy company, these pancakes can be made using lactofree milk and butter and turn out delicious too.

Fluffy American-Style Pancakes Recipe

Ingredients (to make 6-8 pancakes)


  • 135g plain flour
  • 1tsp baking powder
  • 2tbsp caster sugar
  • 130ml milk (lactosefree for me)
  • 1 large egg
  • 2 tbsp melted butter (Lactose free - olive oil can also be used)
  • Extra butter for cooking - or other cooking oil etc. 
  • Lemon & Extra Sugar or any other filling your heart desires

Method


  1. Sift together the powdered ingredients together in a large mixing bowl (flour, baking powder and caster sugar)
  2. Beat together the milk and the egg in a jug then add in the melted butter.
  3. Pour the jug mixture into the large mixing bowl mixture and beat until smooth. Once combined allow to stand for a few minutes.
  4. Heat a non-stick frying pan over a medium heat and add your additional butter. Once hot, pour your batter into the pan to desired pancake size.
  5. If you want to add any fillings pop them in immediately after your batter enters the pan. I tend to stick to traditional lemon and sugar pancakes.
  6. When the top of the pancake starts to bubble it's time to show off your tossing/flipping skills.
  7. Repeat until all the batter is used up or you just can't possibly eat any more.

Now when I first tried this recipe I was slightly baffled by the inclusion of the sugar but for a sweet pancake it really works. I haven't tried this recipe for savoury pancakes but I would assume that you just remove the sugar aspect. Some of my other favourite sweet toppings which I would recommend you try are:

- Lemon and Raisin
- Strawberries and cream
- Honey and Lemon
- Orange and Brown Sugar
