Happy Easter Everyone!
I hope you have all over indulged in lots of chocolate and goodies today already. As an Easter treat I thought I would share a recipe with you for my ultimate chocolate covered indulgent and quite frankly naughty chocolate fudge cake. This cake is a cake that Bruce Bogtrotter would be proud of. It's also a great way to use the chocolate, treats and sweets from your easter eggs as toppings.
Preparation Time: 20 minutes + Decoration Time at the end
Cooking Time: 25 minutes (plus a little cooling time)
Oven Temp: 180 degrees celcius (Fan Assisted)
Serves: 8
Ingredients:
For the Cake:
- 175g Self Raising Flour
- 2 Tbsp Cocoa Powder
- 1 Tsp Bicarbonate of Soda
- 150g Caster Sugar
- 2 Medium Eggs (Beaten)
- 1/4 Pint Semi-Skimmed Milk
- 1/4 Pint Sunflower Oil
- 2 Tbsp Golden Syrup
- 75g Butter (Unsalted)
- 175g Icing Sugar
- 3 Tbsp Cocoa Powder
- Drop of Milk
- As many chocolate goodies of your choice for
Method:
- Pre-heat your oven
- Line two 7" cake tins
- Sieve the flour, cocoa powder and bicarbonate of soda into a large mixing bowl
- Add in the caster sugar and mix well
- Make a large well in the centre of the bowl
- Add the golden syrup, beaten eggs, sunflower oil and semi-skimmed milk
- Mix with an electric whisk until smooth and gooey
- Spoon the mixture evenly into the two cake tins
- Bake for approximately 25 minutes until risen and firm
- Cool on a cooling rack
Once cool you can make the butter icing, if you would like to save some time and cheat this step, Betty Crocker do a great Chocolate Fudge Icing which is available in most supermarkets.
- Beat the butter in a bowl until soft
- Gradually sift in the icing sugar and cocoa powder
- Add enough milk to make the icing fluffy and spreadable
- Spread on the middle and top of your cake, or for something a little lighter you can use a simple buttercream as filling and spread all the chocolate icing for the top and sides.
Whilst the icing is gooey I'd advise decorating with the chocolates goodies of your choice, I chose Cadbury creme eggs and mini eggs, half an Easter egg, a popping candy Easter bunny with two colours of chocolate drizzle and some popping candy, but feel free to decorate with all the goodies of your choice.
