This year I have got totally addicted to making, and eating gingerbread. This recipe just makes me feel instantly festive and is delicious with a hot drink. Just be warned they are incredibly more-ish, so I guess it's a good job it makes quite a few biscuits!

Gingerbread Man Recipe
Recipe Information:
Preparation Time: 20 minutes + an chill
Cooking Time: 10 - 12 minutes
Oven Temperature: 180 degrees C/350 degrees F (Fan)
Baking Tin: Flat
Serves: Approx 25 biscuits

Method:
- Mix together the flour, cinnamon, ginger, baking powder, ground cloves, salt and nutmeg until combined and set aside.
- In a separate bowl, beat together the butter and sugar until light and fluffy.
- Add in the egg and molasses and beat until combined.
- Gradually and slowly add the combined flour mixture until just combined. You may find you need to need the mixture like a dough slightly to make it one item.
- Separate your dough into 3 equal sections, flatten into discs, wrap in cling film and chill in the fridge overnight. (If you want to cheat here you can pop them into the freezer for around 30 minutes)
- Turn on your oven to the desired temperature.
- Lightly flour a hard surface and roll out the dough until at the desired thickness for your biscuits. Then use your favourite cookie cutters to cut your biscuits into christmas shapes. I chose gingerbread man, stars and trees.
- Put your cut out shapes onto grease proof paper
- Bake in the oven for 10-12 minutes, or until lightly browned and hard round the edges and on top.
- Remove from the over and let cool on a cooling rack
- Once the cookies are at room temperature, mix your two icing ingredients together until at the desired consistency. Normally this is a tablespoon of warm water to around 150g of icing sugar, but feel free to adjust to suit.
- Use the icing to decorate to your hearts content and let set.
