Everybody is baking banana bread.
Or so it seems.
Isolation seems to have brought out all of the inner star bakers and banana bread is top of the menu.
I have to say after hearing and seeing everyone talking about it, I was hungry for banana bread myself. If you are too, below is my delicious recipe with a chocolate-twist.
Recipe Information
Prep Time: 10 minutes
Baking Time: 30 minutes
Serves: 8-10 slices (depending how big you like your slice!)
Ingredients
150g butter (unsalted)
150g caster sugar
2 large eggs (beaten)
2 ripe bananas (mashed)
100g chocolate chips
150g self-raising flour
1 tsp baking powder
For Topping:
50g Icing sugar
1 tbsp water
banana chips
Method
1. Preheat your oven to 180C.
2. Grease and line your loaf tin with butter and grease-proof paper
3. Cream together the butter and caster sugar until fluffy
4. Gradually beat in your eggs
5. Sieve and fold in your flour and baking powder
6. Fold in your mashed bananas and chocolate chips, ensuring even distribution
7. Pour into your lined tin and make sure evenly spread
8. Bake for 30 minutes, until a skewer or toothpick comes out clean and dry
9. Cool on a wire rack in the tin, once cool remove from tin
10. Mix your icing sugar with the water to make the icing then drizzle over the top of the loaf
11. Decorate with your banana chips
12. Cut, Serve and Enjoy!
